Wine making: spontaneous fermentation in steel and fiberglass by indigenous yeasts present on the skins

Aging: 12 months in steel and fiberglass, plus 3 months in bottle

Serve at: 16-18° C

Food matches: excellent with grilled white meats, fresh and medium-aged cheeses; exceptional with carbonara pasta!
