About him: delicious white wine obtained from Chardonnay and Pinot Noir from vineyards near the village of Abergement-le-Grand which is located a few kilometers west of the main city of Arbois. Pinot Noir (one third of the mixture) is quickly squeezed to avoid the release of color from the skins in order to obtain a white wine and Chardonnay is squeezed separately. The fermentation for this wine was very slow due to Charles' very cold cellar, in fact it lasted all winter! After the two wines fermented separately, they were mixed and aged until bottling. Thus a vibrant wine is born, full of vitality and uncontrollable drinking! Another exciting reinterpretation of the Jura!!!
