Wine making: spontaneous fermentation with soft pressing to preserve the fruit with three weeks maceration in steel vats

Aging: for 16 months, half in used 600 liter wooden barrels, the other half in steel. No clarification, filtration or addition of sulphites

Serve at: 14-16° C

About him: incredible fresh Pinot Noir from Arbois! Perfumes of red berries, white pepper and mineral puffs; on the palate it's very fine and elegant, with a surprising liveliness and a long finish. The bottle goes down very (too much?) easily...! CHAPEAU!!!
