About him: here is the Yavol, a blend of all the authorized Jura vines, Chardonnay, Savagnin, Pinot Noir, Trousseau and Ploussard collected from a very old parcel of vines (70 years!) in which the varieties are co-planted (this old vineyard has vines planted randomly) which means that there may be Pinot Noir vines planted next to a Savagnin vine. The result is a delicious wine that has an interesting texture derived from the combination of red and white grapes and a complex and compelling flavor obtained by the interaction of the different grape varieties. And, with only 11% alcohol, it can be enjoyed at any time of the day, including breakfast! A fascinating and revisited trip to the Jura!!!
