Wine making: the three types of grapes were fermented separately in steel using various fermentation techniques and all had a slightly lower contact with the skins than the Bianco of previous years.
Aging: in steel for at least 18 months and they have been racked only once to assemble the final blend before bottling; clearly, no addition of sulphites, clarification and filtration
Serve at: 10-14 °C
Food matches: appetizers, grilled fish, pasta with white fish sauce, hot fish appetizers.
About him: the Bianco 2019 is a completely different creature compared to 2018, both for the composition of the blend and for the maceration times on the skins which were slightly lower than in the past. The resulting wine is very balanced, structured and energetic. It looks light, focused on freshness while having a good elegant structure with a super vibrant acidity. The fruit of the 2019 harvest was among the best ever obtained from the Heathcote vineyard and is truly reflected in this wine. With Zero adds and zero s02 this is a super clean and fresh wine!
