Wine making: spontaneous fermentation with maceration on the skins for three days
Aging: two thirds of the mass in steel while the rest in glass demijohns for eight months. Subsequently the wine was blended and left to age for another five months in the bottle; no clarification, filtration or addition of sulphites
Serve at: 10-14 °C
About him: just over 200 bottles for the first "Brutal" from Etna! A vertical wine, characterized by a marked sapidity and minerality, rich and enveloping.
It has a very expressive aroma, with tropical notes, herbs and a pinch of salinity; complex and deep...definitely unique!
Salvatore recounts: “Those who tasted this white were pleasantly surprised and this led me to think that it had the makings of a Brutal. It wasn't easy to get in touch with the Brutal Wine Corporation guys, but after a few attempts I succeeded. The three founders tried my wine and felt it was suitable to carry their label. I am very proud because for me it's a product that expresses the potential of the Etna area in a completely frank and honest way".
