Wine making: spontaneous fermentation with direct press of the whole bunch without contact with the skins
Aging: for four years, partly in old 300 liter wooden barrels and partly in amphorae; no added sulphites, no filtered or clarified
Serve at: 8-12° C
About him: another crazy interpretation of Chardonnay! Nose with mineral notes, flint, grapefruit and quince. On the palate it's an intense, mineral wine, of great volume and with a long, saline and dynamic finish. Super!!!
