Let's go to the legendary Paolo and his precious microcosm near Velletri, precisely in Colle Formica obviously!
Old vineyards in which we find a precious heritage of plants dating back over 40 years of the historically most widespread varieties in this area including Sangiovese, Malvasia di Candia, Moscato etc. The soils reside on land of ancient volcanic origin, therefore dense in minerals and respected by the wise grower using only copper and sulfur in the vineyard, just as the juice is preserved in the cellar, without modifications or artifices of any kind.
We let our palates be tickled by two of his hilarious pet nats!
