Ten splendid days of delicate whole bunch maceration for this Pinot Noir with grapes coming from vines of around seventy years of age from the small farm managed by this close-knit couple in Chassey-le-Camp, in the Côte Chalonnaise (AOC Bouzeron) .
Once fermentation is finished, the juice age for about ten months in old French oak barrels.
Surly and closed in the initial minutes, decanted after about 20 minutes, it generates an infinite multitude of fruity aromas, spices and herbs. In the mouth, small red berries, liquorice, spices, roots and herbs in an ethereal mix that never weighs down the sip and makes it deep and intriguing also thanks to a very delicate tannin, a beautiful minerality and acidity. A graceful and fantastically exciting version of Burgundy!
