Wine making: spontaneous fermentation in steel with direct press of the Merlot, while the Garnatxa Negra is destemmed and the Syrah left in whole bunch; everything remains in infusion/maceration for 5 days
Aging: in steel for about ten months; not filtered, not clarified and without the addition of sulphites
Serve at: 14-16° C
