Wine making: spontaneous fermentation; the grapes are harvested by hand, destemmed and crushed with bare feet, then fermenting them in old wooden barrels in contact with the skins for about two/three weeks (it can vary from year to year depending on the vintage)
Aging: about two years in old 1200 liter wooden barrels; no clarification, filtration or addition of sulphites
Serve at: 16-18 °C
