Wine making: spontaneous fermentation; part of the grapes with whole bunches maceration in fiberglass started by pounding the grapes with bare feet; the other part always in fiberglass but in carbonic; racking, pressing and mixing of both vats with the free-run must and the pressed must. In total, about three weeks of maceration on the skins.
Aging: half in steel and the other in old 15hl barrels for about eight months; no filtration, clarification or addition of sulphites
Serve at: 14-16° C
Food matches: mixed appetizers, but also with a nice piece of beef!
About him: this cuvée takes its name from the name of a musical style much loved by Vincent for its mix of hip-hop and energetic rock. In fact, his favorite bands are Rage Against The Machine, Faith No More, Suicide Tendencies, Body Count. As for the wine, it's also the fusion between Gamay from Auvergne and Gamay from Beaujolais and between two types of vinification. And we keep rocking with this perfect fusion example!!!
