Wine making: spontaneous fermentation; the grapes are harvested by hand, destemmed and crushed with bare feet, then fermenting them in old wooden barrels in contact with the skins for about two/three weeks (it can vary from year to year depending on the vintage)
Aging: about two years in old 500 and 1500 liter wooden barrels; no clarification, filtration or addition of sulphites
Serve at: 16-18 °C
About him: juicy and intense, with great elegance and complexity. This is an intensely aromatic red wine, based on dark red fruits mixed with herbaceous notes, molasses, earth, smoke and black walnut. In the mouth it has a nice structure even if it remains of excellent vitality, it has small smoky notes and an incredible stony minerality which complete a fantastic experience. One sip leads to another!
