Wine making: spontaneous fermentation with joint maceration for about nine days of all the grapes destemmed by hand and left whole grain
Aging: about one year in old 500 liter wooden barrels; no added sulphites, not filtered or clarified
Serve at: 10-14° C
About him: 2021 was a difficult year for Morgane, lots of rain and few sun, so she decides to vinify together almost all the red-skinned berries of his small and old vineyards with the aim of creating a wine ready to drink, but which reflects however as much as possible the characteristics of the Jura.
Short and delicate whole grain maceration to extract as little as possible from the peel and leave as many fruity notes as possible and a graceful palate.
A wine not for everyone! The volatil is present, but thanks to the low alcohol content and the infinite vitality it can still be drunk in a second; very ready to drink, more like a rosé than a red, light and super refreshing. Even in the worst situations you can always come up with something interesting ;)
