Les Vins du Cabanon
The last post of our activity is an homage to one of the most important winemakers of the natural wine movement and unfortunately passed away recently...the unforgettable Alain Castex!
La Fleur au Fusil is a blend of Grenache Gris, Carignan, Morvedre and we also think a few Muscat, given the super aroma of this pure juice full of infinite goodness!
Ten days of maceration in steel, with half of the grapes whole and the rest destemmed and crushed; then follows a delicate press, mixing of the free-run must and the pressed must, end of fermentation and maturation on the yeasts for ten months in 250 and 500 liter amphorae. Then bottled when the moon was in the right position.
A wine of great finesse and elegance, with notes of small red fruits and flowers, hints of cocoa and herbs to finally open up definitively in sparkling aromatic notes of tropical fruits. Super!!!
