Wine making: spontaneous fermentation with whole bunches maceration in French oak truncated cone vat. After a couple of weeks, they are pressed inside the vat itself and left to ferment on the skins for another three weeks
Aging: 20 months in 5 hl French oak barrels, then a further 6 months in the bottle; no addition of sulphites, clarification or filtration
Serve at: 14-16° C
Food matches: mixed earth starters; first courses with tomato sauces; grilled white and red meats
About him: after the various experiences in France of Clémentine and Gianmarco, here is the decision to plant some Syrah on the shores of Lake Bolsena with the certainty that the splendid volcanic terroir enhances its quality even more! In 2020, given the good quantities, it was decided as in 2016, to make two separate Syrahs and vinified in a different way, with the labels of Ninì and Lulù, expressions of two different characters.
Compared to Ninì 20, he wants to express himself with a more "serious", austere character, with a more decisive extraction. Deep, long and complex, with notes of ripe red fruits, spices and herbs; sensations and drinkability supported by the minerality of the terroir that always leaves its mark. A Syrah from the Rhône...ah no! We are in Bolsena... ;)
