Wine making: the grapes from the old vines were de-stemmed and macerated on the skins for about a week, while the others from the younger ones were pressed directly.
Aging: the wines age separately for about 10 months in 225 liter barrels of 1, 2 and 3 years; assembly to bottling. No clarification, filtration or addition of sulphites
Serve at: 10-12° C
Food matches: with courses based on stewed or fatty fish
About him: coming from mineral soils located south of the Layon River, Cedric manages to pull off the elusive trick of creating a richly structured Chenin Blanc that retains a lot of vitality. Maybe this comes from the union of old and young vines? Maybe from the precise vinification without additives, or from the slow aging in cask in its very cold cellar? The exact answer may never be known, but the wine is spectacular, full of aromas and spices, with notes of tropical fruits, sapidity and depth. Intense and satisfying drink!
