Wine making: 50% of the grapes are pressed directly and fermented in terracotta amphorae, while the other 50% is macerated on the skins for a few months in steel
Aging: in steel and terracotta amphorae for about two years; no addition of sulphites, clarification and filtration
Serve at: 10-14 °C
Food matches: appetizers, grilled fish, pasta with white fish sauce, hot fish appetizers.
About him: probably the only Nosiola grown in Australia. Dane fell in love with this variety after drinking Elisabetta Foradori's famous cuvée years ago. This wine comes from only three rows of this northern Italian variety planted by the Chalmers family in Heathcote. A lot of skin contact is used here to help tame the exotic floral notes typically associated with the variety. Lemon zest, cinnamon, barley malt and sandalwood with silky and persistent tannins and lively acidity. A truly unique wine!
