About him: by translating the meaning of the word Omnia (everything) from Latin into Italian, one immediately understands the reason for this name. This wine was born out of trying to make sense of the odds and ends that didn't quite fit elsewhere in the cellar. After a first press of the carbonically macerated Merlot directed to the “Merlotte” cuvée, Emilie saw that there was still a lot of material left in the fruit and therefore decided to pass it over again in a vat of Macabeu and Bobal already in maceration. After a partial agement in demijohns, the wine was bottled shortly before the following year's harvest, producing a wine of great linearity and graceful structure. A delicately savory nose leads into a mineral and saline palate with just a touch of fleshy fruit and powdery tannins lining the edges. The right utility has been found for everything!
