Wine making: the French varieties were harvested on August 15th while the Barbera and Bonarda on September 13th. The non-stemmed grapes were crushed with bare feet and fermented separately and spontaneously in cement tanks with maceration on the skins for five days.
Aging: for 18 months, partly in old oak barrels and partly in fibreglass; no addition of sulphites, no clarifications or filtrations
Serve at: 16-18° C
About him: we present the first and only red wine label at the moment by the fearless and talented Shun Minowa. The Anitya (means "impermanent" in Sanskrit) is a blend made from grapes from a single vineyard from the 1990s.The vineyard, recently rented by our oenological hero of the Rising Sun, is the daughter of the desire to experiment and try new solutions of a winemaker who at the beginning of the 90s decided to plant in a small vineyard of Barbera and Bonarda as well Pinot Noir, Pinot Gris and Merlot. Right from the start, Shun's dilemma was how to vinify all these splendid grapes, but the decision was the simplest and most direct, born out of the curiosity to understand the provocative intention of those who had imagined it this way. The result is surprising and has made it possible to obtain a wine never tried anywhere on earth! The five different grapes have generated a perfect combination of fruit and calcareous minerality of the terroir!!!
