Difficult to describe...you could write a novel...just in a single word PERFECTION!
For Jean-François everything happens in the vineyard and only the most beautiful grapes are brought to the cellar. The harvest is manual in boxes of 10 to 15 kg, placed directly in vats, mostly not destemmed. The must is cooled to about 5°, then it will naturally rise in temperature and will have the effect of triggering the fermentation, naturally through the indigenous yeasts. Then not much more happens during maceration; no pumping over or pressing. Jean-François makes a real infusion of his berries, which has the main result of drawing very little color.
This Trousseau is the confirmation! Red fruits, herbs, spices, acidity and minerality perfectly mixed with carbonic maceration, unparalleled drinkability, elegance, length and more and more... A dream!!!
