In 2017 Naïma and David Didon took over an old farm in Chassey-le-Camp, in the Côte Chalonnaise, to realize their long-held dream of their own biodynamic property. The small village belongs to the AOC Bouzeron, which is Burgundy's only village appellation for Aligoté. David, an experienced winemaker, spent over a decade consulting with Etienne de Montille in Volnay, as well as spending time in the cellar and in the fields with friends Julien Altaber and Dominique Derain. The Didon vineyard is a 2-hectare lieu-dit (historic vineyard) called "Vignes Blanches" planted with Pinot Noir, Pinot Blanc, Chardonnay and Aligoté. It's located on an east-facing slope, with soil of dense yellow limestone and is recognized as one of the best in the village. The vineyard with vines over sixty years old is worked a few times at the beginning of the season with horses and all other work is carried out manually, limiting the compression of the soil, avoiding the use of tractors and other heavy machinery.
In the cellar they work as little as possible, respecting and embracing new and alternative techniques. The whites are all whole bunch pressed while the reds have a short maceration on the skins for 10 days. The wines are fermented in a mixture of vessels including amphora, barrels and fibreglass. All wines spend about an year on the yeasts before being bottled and without adding sulphites.
David and Naima are creating some of the most exciting Burgundies we've seen in recent years. With great agriculture behind them and no additions in the cellar, these wines are leading a new wave of exciting Burgundian producers.
