Another rising and super shining star from Jura! Nicolas Jacob, now a well-known vigneron with training at the Ganevat school, after starting his adventure at Domaine Macle, began his solo career in 2015 by purchasing and taking over vineyard plots on the terroirs of L'Étoile and Voiteur. His estate, located in South Revermont, today extends over 6 hectares with some old "wild" vineyards that he managed to recover in Rotalier, after they were abandoned by the elderly winemakers of the area, but which certainly add something intriguing to the its cuvées.
Like his mentor Jean-François Ganevat, Nicolas Jacob resolutely follows a natural approach, committed to valorizing the terroirs of the southern Jura by vinifying plot by plot, resulting in a multitude of micro-cuvées. His vines are grown organically, and his winemaking is as natural as possible, with spontaneous fermentations and without the addition of sulfur dioxide or other inputs. Wines that obviously immediately recalled that Ganevat style, but even with greater depth.
With all this it's no surprise that Nicolas Jacob is one of Jura's rising stars!
