Champ Levat 2021 - Mondeuse with two-week carbonic maceration and aging in old barriques; €43.90
Cote Pelée Réserve 2018 - Mondeuse from a small, old plot with two-month carbonic maceration and aging in old barriques; given the excellent quality of the '18 grapes, this vintage was classified as a reserve; €87.90
La Grande Journée 2021 - Altesse from very old vineyards; two-week carbonic maceration, pressing followed by a further three months of maceration on the skins with manual punching; €84.90
Les Barrieux 2021 - Jacquère and Roussanne from old vineyards with two-week carbonic maceration and aging divided between old barriques and large wooden barrels; €63.90
La Tour Sarazine 2021 - Muscat à petits grains with two-week carbonic maceration and aging in old barriques; €50.90
Mademoiselle Germaine 2016/17 - Jacquère and Mondeuse briefly macerated and refermented in the bottle with their own yeasts; disgorged by hand; €41.90

Cotillon Réserve 2019 - separate vinification of each variety; the juice of the Jacquére and Altesse remains in contact with the skins, with punching down, from two weeks to three months depending on the variety; the Roussanne is pressed directly.
