Le Temps des Cerises - Axel Prufer
2003: it's already the Time of Cherries and the harvest of Axel's first wine which exploits its own vineyard and rents the rest for a total of 8.5 hectares. Le Mas Blanc is home to the winery, but the vineyards are located further up the hills in some of the region's most beautiful but inhospitable areas. It's not easy to produce delicate and fresh wines from such a brutal environment, but Axel succeeds year after year thanks to the harvest done at the right time and a delicate touch in the cellar, where all the grapes are fermented in whole bunches, including whites and élevage is done in large tanks.
Wines with evocative and provocative names as much as he is! Today he is a sorcerer's apprentice to the point of attempting long macerations on whites or blends of which he himself has forgotten the vines...what a phenomenon!
