Le Temps des Cerises
Super wilde Chardonnay from Languedoc, macerated on the skins for about ten days in carbonic and refermented in the bottle without being disgorged.
It's an orange wine pet nat with only 9.5% vol, lots of freshness and fleshiness, but also a little acetic which combines notes of yeast and white-fleshed fruit. Soooo messed up!!!
