Wine making: from the old red grape vines dated 1980, the grapes are harvested by hand in crates with a careful selection of the bunches, which are then de-stemmed with a slight breaking of the berries; spontaneous fermentation in steel tanks, in contact with the skins for 1 month.

Aging: in large exhausted oak barrels, with its fine lees for 1 year; no clarification, filtration or addition of sulphites.

Serve at: 16 °C

Food matches: grilled white meats, fresh cheeses
