Grape variety: 80% Nerello Mascalese, 20% composed of a mix of native vines such as Nerello Cappuccio and Minella Nera

Wine making: spontaneous fermentation of the grapes, but separately (given the different moments of maturation); those of the lowest vineyard are vinified with about 10% of whole bunch grapes, while those of the highest vineyard with total destemming of the mass. Maceration on the skins in cement for about 15 days
Aging: half of the mass in cement, the other in large old wooden barrels for about 16 months; no clarification or filtration
Serve at: 16-18 °C
About him: the '20 was a hot year and the result of a harvest carried out from 7 vineyards in 7 different districts (Allegracore, Pietramarina, Friera, Capreri, Piano dei Daini, Crasà and Zucconero) located between 550 and 930 m asl from vines about 50 years old on soils characterized by lava ash from different eruptions.For a complicated year, the skill of the winemaker comes into play who, thanks to the different types of vinification, manages to obtain a perfect combination of contrast between the masses from higher vineyards (with greater freshness) and those from lower vineyards.
Work that demonstrates the perfect and profound knowledge of one's parcels and an ability and sensitivity in composing them in a super bottle.
The result is the son of the sandy and stony terroir of the volcano, which transmits the same minerality to the nose and mouth, with the addition of aromas and flavors of red fruits and licorice, with delicate herbaceous hints and an elegantly subtle tannin.
